No-Bake Chocolate Oatmeal Cookies

The body wants what the body wants.  Listen to your body.  This is what all the experts say about pregnancy so who am I to ignore them? Last week, my body wanted these cookies and I was all ears.  These are my go-to cookies for when my sweet tooth just can't be satisfied by left over selection box chocolate.

No-Bake Chocolate & Oatmeal Cookies

There is nothing noble or fancy about these cookies, no hidden health benefits.  Just straight up deliciousness, ready in just 20 minutes without the faff of baking and cooling.

Ingredients (Makes 2 Dozen):

1/2 Cup of Butter

2 Cups White Sugar

1/2 Cup of Milk

4 Tbsp of Cocoa Powder

1/2 Cup of Peanut Butter (or any other nut butter you fancy)

3 & 1/2 Cups of Porridge Oats

2 Tsp of Vanilla Extract


+  In a large saucepan, add the first four ingredients and bring to a boil, stirring as you go.

+  Let the mixture boil for 1 minute (set a timer if you need to - it's important that the mixture boils properly).

+  Turn the heat off and mix in the remaining 3 ingredients until fully combined.

+  Line a baking tray with wax/baking paper & dollop dessert spoon amount sized cookies on.

+  Place the sheet of cookies in the fridge to harden up for 20 minutes.
