Healthy No-Bake Date & Chocolate Squares
Dates, you say? Aren't they just beefed up prunes? The remedy for your granny's bowel struggles?
Well, yes AND no. Dates are glorious. They are full of flavour, sweetness, fibre, vitamins and minerals. They are a natural source of sugar (way better than refined sugar) and they are known to help with (ahem) digestive health, heart health and they help in reducing blood pressure.
I've been using dates to sweeten things up for a while now - chopping them into granola, blitzing them in the nutribullet and using them as the pièce de résistance in my favourite appetiser (thanks Shauna). I thought I'd experiment in using them as a base for a sweet treat, and came up with these yummy , guilt-free squares.
+ 250 grams of pitted dates
+ 1/2 cup of coconut oil melted
+ 1/2 cup of desiccated coconut
+ 100 grams of good quality (certified) dark chocolate
+ Gradually add in the dessicated coconut - keep blitzing...
+ Melt the coconut oil and pour it around the mixture and give it another final blitz
+ Once the mixture comes together, dump it out onto a small baking tray and spread it out - pressing it together and into the corners to make an even layer.
+ Melt your chocolate down (gradually in the microwave, stirring every 15 seconds - making sure it doesn't burn) & pour it over. You can drizzle it on or spread it over - don't let me boss you around with your chocolate preferences, for goodness sakes!
+ Now cut those babies up and serve on your finest china (or marble chopping board)!
